JAPANESE PORK CUTLET

とんかつ[TONKATSU]

A Japanese dish made by coating slices of pork with wheat flour, beaten egg, and breadcrumbs and deep-frying them in oil. The word tonkatsu is a combination of the Sino-Japanese word ton meaning "pig" and katsu, which is a shortened form of katsuretsu, the transliteration of the English word cutlet, which derived from French côtelette, meaning "meat chop." Tonkatsu is often served with a heap of shredded cabbage. For those who are conscious of gaining weight, it is recommended that they eat cabbage first, as the dietary fiber in cabbage will help control the appetite and reduce the absorption of fat.
