BLUEFIN TUNA

まぐろ[MAGURO]

Maguro is a special fish for Japanese of all ages and has always been the most favored ingredient for sushi and sashimi. Around 25% of tuna caught worldwide is consumed in Japan, where just one fresh maguro can cost more than a hundred million yen if it is the first catch of the year. Each year’s first auction of maguro is broadcast on TV, and watching it has become an annual event for many Japanese. Maguro meat is roughly divided into akami with less fat and toro with more fat. I used to lovetoro, but now prefer lighter-tasting akami. I guess I’m getting old.
