CURRY RICE(CURRY OVER RICE)

カレーライス[KARĒ-RAISU]

One of the most popular dishes in Japan eaten frequently at home and in more than 5,000 curry restaurants all over Japan. Curry originates in India and took its own evolutionary path in Japan, where curry is typically served by putting steamed rice on one half of a shallow bowl and pouring the thickened curry roux on the other half. The smell of curry evokes nostalgic childhood memories for many Japanese, young and old alike. My mother’s secret ingredient was a few pieces of chocolate, which, according to her, make the roux milder and more savory. Maybe that is why there is always a hint of sweetness in her curry.
