Crabs are treasured as luxury food in Japan. The best season for enjoying crabs is typically winter. Many people travel to Hokkaido, a famous crab region, just to eat crabs. Quick to lose freshness, most of the ocean-fresh crabs are boiled immediately at the port. Taking a large bite of a freshly boiled crab in a port town can be quite an experience. I’ve been living in Japan for five years and grew to love crabs except kani-miso. At a sushi bar, I ordered kani-miso, thinking it was “crab meat seasoned with miso.” But what I got was “crab guts.” My partner was savoring it. Unbelievable!
